BURGER CON FARINA DI CECI E VERDURE

I burger con farina di ceci e verdure sono un’alternativa veg ai soliti burger di carne. Ho letto una ricetta simile sul web poco tempo fa e allora ho deciso di sperimentare: ho aggiunto alla farina di ceci le verdure che avevo in frigorifero così ho fatto una bella pulizia! Voi potete tranquillamente utilizzare la verdura di cui disponete in frigorifero.

Ingredienti per 10 burger

  • 100 g di piselli fini surgelati
  • Una carota
  • Una patata
  • Una melanzana
  • Basilico e Prezzemolo fresco (in alternativa potete insaporire con le erbe aromatiche che vi piacciono di più)
  • Un pizzico di curcuma
  • Farina integrale di ceci q.b (più o meno 5 cucchiai)
  • Un cucchiaio di olio extra vergine di oliva
  • Sale e pepe q.b
  • 100 g di Parmigiano Reggiano grattugiato (facoltativo)

Procedimento 

Per preparare i burger con farina di ceci e verdure per prima cosa lavate e mondate le verdure, tagliatele a pezzetti e tuffatele in acqua bollente salata. Se preferite potete cuocere e verdure al vapore.

Cuocete le verdure fino a quando saranno morbide.

Scolate bene, lasciatele asciugare su della carta assorbente e lasciatele intiepidire.

Con una forchetta schiacciate le verdure, aggiungete il basilico tagliato a julienne e il prezzemolo.

Regolate di sale e di pepe.

Se gradite aggiungete un pizzico di curcuma.

Amalgamate bene con un cucchiaio di olio extra vergine di oliva e mettete tanta farina di ceci quanto richiesto per far si che l’impasto risulti denso ma morbido.

Se gradite unite anche il Parmigiano Reggiano grattugiato.

Bagnate le mani e date la forma ai burger (per dare una forma più regolare potete usare il coppapasta).

Fate cuocere i burger con farina di ceci e verdure in una padella antiaderente calda fino a doratura.

Potete cuocerli anche in forno per 20/25 minuti a 180 gradi (forno statico).

Hamburger with chickpea flour and vegetables

Ingredients for 10 hamburgers

  • 100 g of frozen peas
  • A carrot
  • A potato
  • An eggplant
  • Basil and fresh parsley (alternatively you can flavor it with the aromatic herbs you like best)
  • A pinch of turmeric
  • Whole chickpea flour to taste (more or less 5 tablespoons)
  • A spoonful of extra virgin olive oil
  • Salt and pepper to taste
  • 100 g of grated Parmesan cheese (optional)
Method

Wash and clean the vegetables, cut them into small pieces and dip them in boiling salted water. Cook the vegetables until soft.

Drain well, let them dry on paper towels and let them cool.

With a fork mash the vegetables, add the basil cut into julienne strips and the parsley.

Season with salt and pepper.

If you like it, add a pinch of turmeric.

Mix well with a spoonful of extra virgin olive oil and put as much chickpea flour as needed to make the dough thick but soft.

If you wish, also add the grated Parmigiano Reggiano cheese.

Wet your hands and shape the burgers (to give a more regular shape you can use the pasta ring).

Cook the burgers in a hot non-stick pan until golden brown.

You can also bake them for 20/25 minutes at 180 degrees (static oven).
